Building a model for gastric mucins

Gastric mucus is a vital component for the protection of the stomach from the highly acidic gastric secretions, preventing autodigestion and providing mechanical protection. This protective properties are mainly attributed to the high molecular weight glycoproteins mucins and their ability to form a gel under acidic conditions.The key objectives of my experiments are to effectively build a model of the 2 gastric mucins (MUC5AC and MUC6). Previous SANS experiments on commercially available MUC6 mucins showed evidence for a dumbbell shape, although those mucins have undergone heavy processing and lack the ability of natural mucins to gel. By purifying porcine gastric mucins from fresh stomachs, which are the closest to human stomach, SANS will give us a clearer image of them, since these will be carefully prepared as to represent the stomach gastric mucus.
