Following our previous study of adsorption of globular lysozyme and BSA at the oil/water interface by neutron reflection, we continue to explore how unfolding of globular structures by reducing the disulphide bonds affects the structure of the adsorbed layers. Inter is preferred because we have built technical capability on this instrument. The results will enable us to answer if the unfolding of the globular structures affects the entire adsorbed layers, especially the characteristic segment distributions into the oil region.
