Operating methods and conditions for fermentation

This dataset presents the conditions and monitoring of alcoholic and acetic fermentations of apple and grape pomaces into wine and vinegar. Measurements include pH, Brix, alcohol content, acidity levels, fermentation temperature, and cooling water temperature. These measurements were conducted over the years 2021, 2022, and 2023. Measurements were carried out on two 10L pilot acetifiers from Frings and a semi-industrial acetifier from Gilson
