This dataset focuses on the sensory perceptions and purchasing intentions of consumers towards plant-based products. Data were collected in 2023 from a sample of 132 Spanish consumers through a structured, validated questionnaire administered via the Qualtrics platform. The questionnaire gathered information on hedonic sensory acceptance, perceived behavioural control, subjective norms, attitudes, and informed tasting experiences related to plant-based food products. The data were analysed using descriptive statistics and partial least squares structural equation modelling (PLS-SEM) to identify the factors influencing purchasing intentions. The dataset offers insights into the moderate attitudes of consumers towards plant-based products, their high ratings of sensory characteristics, and the influence of these factors on purchase decisions. This research aims to inform stakeholders in the food industry about consumer behaviour related to plant-based products, with potential implications for product development and marketing strategies in Spain and similar European markets.
