NIR spectra of cocoa beans

NIR spectra of fermented and dried cocoa beans from Criollo, Forastero and Trinitario varieties, collected in two different regions (Niari in the South and Sangha in the North) of the Republic of Congo in 2022. The instrument used was the NIR spectrometer Ocean Insight with an optical fibers, a light source (Halogen, HL-2000), a contact probe, and a light beam passing through the bean under analysis. The software used for spectra acquisition was NanoQuest 6.1. The analysis was carried out in the dark on 200 cocoa beans per "variety x region). The beans were scanned three times on each side. The average absorption spectra (range: 1350–2500 nm) were then calculated for each bean.
