This dataset describes the drying process of two tomato cultivars, H1311 and Terradou, with a particular focus on the tomato pericarp. The dataset is part of the project IRM-PROSE conducted on the study of the mechanisms involved in the evolution of the structural and physicochemical properties of tomato during air drying. The data stored here are part of the second experiment in which we analysed fresh and dried tomato slices at three different stages using MRI (not included in this dataset), unilateral NMR ((not included in this dataset)), macro-vision histology, texture analysis and biochemical analysis.
