Replication Data for: Plant-protein Stabilized Emulsions as β-carotene Delivery Systems: Colloidal Stability and Behaviour during in vitro Digestion Conditions

This dataset documents in vitro digestion experiments comparing plant-protein (soy, wheat and pea proteins) stabilized emulsions containing Beta-carotene against a control emulsion stabilized with Tween 80. It consists of spreadsheets detailing colloidal stability (interfacial tension, particle size, zeta potential, viscosity, backscattering intensity), pH-stat monitoring of lipolysis, and Beta-carotene bioaccessibility analysis throughout the initial, gastric and intestinal phases.
