This dataset comprises the complete and annotated genome of Lactobacillus delbrueckii subsp. delbrueckii CIRM-BIA865, sequences of expressed genes throughout the kinetic of growth and acidification in soy juice, quantification of targeted metabolites such as sugars, acids and volatil aroma coumpounds produced by the strain during fermentation of soy juice.
