Data of Plant protein in vitro digestibility and bioaccessibility: A comparison between pH-stat and ortho-phthalaldehyde (OPA) methods

This dataset documents in-vitro digestion experiments comparing wheat, soy, and pea proteins against a control (Milli-Q water). It consists of five spreadsheets detailing pH-stat monitoring, spectrophotometric analysis, and zeta-potential measurements throughout gastric and intestinal phases.
