This dataset contains raw data from an in vivo study evaluating the bioavailability and biodistribution of β-carotene delivered via different oleogel structures compared to liquid oil. The study utilized 18 rats (4 treatment groups, n=4; 1 baseline control group, n=2) to assess how the structural composition of the delivery matrix influences the absorption of β-carotene and its metabolic conversion into retinol across different tissues. The experimental design evaluated an enriched corn oil control against three specific oleogel formulations:
Control: Corn oil with β-carotene (BC-corn oil).
BC-OGS: Oleogel structured with glyceryl stearate.
BC-OLEC: Oleogel structured with glyceryl stearate and lecithin.
BC-OHLEC: Oleogel structured with glyceryl stearate and hydrogenated lecithin.
