Replication data for: Effect of Plant Proteins on the in vitro Lipid Digestibility and β-Carotene Bioaccessibility of Oleogels

This dataset presents the physicochemical and nutritional characterization of beta-carotene-loaded oleogels in the presence of plant proteins (soy, wheat and pea proteins) during in vitro gastrointestinal digestion. The data includes zeta-potential analysis (Phase-Analysis Light Scattering), lipid digestion kinetics assessed through pH-STAT titration of free fatty acids, and beta-carotene bioaccessibility values derived from micellar phase isolation and UV-VIS spectrophotometric quantification against a hexane-based calibration curve. These data provide a quantitative evaluation of the impact of protein addition on the lipid digestibility and nutrient release of oleogel systems.
