NMR metabolomics of dissected tomato tissue for comparison with metabolic mapping using CEST imaging of intact tomato fruit. 1D 1H-NMR metabolomic profiling of five tissue types, exocarp, mesocarp with endocarp (named pericarp in the present dataset), columella with placenta (named columella in the present dataset), locular tissue, and seeds including their surrounding envelope or sheath (named seeds in the present dataset) of 8 tomato fruits. One fruit for breaker or red-ripe stages, and two fruits for mature-green, orange or light-red stages of development.
