Quantification of vitamin c, vitamin b2, GSH, GSSG and carotenoids in four spinach varieties through HPLC and enzymatic assay.

This dataset reports the values for vitamin c, vitamin b2, glutathione and carotenoids measured in four spinach varieties under different environmental conditions. There were three different vapour pressure deficit (VPD) and two different light spectrum conditions (control and high blue). The GSH and GSSG content were measured by an enzymatic assay, whereas the rest of the compounds were measured via HPLC.

VPD1, VPD2, VPD3 correspond to the three different VPD conditions that the spinach were grown in. The light treatment ST is control, whereas HB is the light spectrum with more blue light. The names of the four spinach varieties are anonymized for confidentiality reasons. Green1 and Green2 are completely green, whereas Red1 and Red2 have red veins.
